Lazy coq au vin In a pressure cooker
1 large sliced onion
5 minced garlic clove
3 large carrots sliced and peeled
5 large stalks celery sliced
6 chicken legs
2 cartons chicken stock
3 tbs olive oil
2 slices of ham diced or 1 ham steak diced
8 oz burgundy marinated mushrooms sliced
Sauté onions and garlic in olive oil. If able to sauté in cooker. If not a fry pan is okay.
Transfer onions and garlic into cooker. add chicken stock turn on high or if you have a soup setting use it. add pepper if desired.
Meanwhile brown chicken slightly on all sides. Use olive oil. Then add to the pot.
Add ham, and veggies. Cover and pressure cook for 25 minutes.
Then debone chicken if desired. Then serve
Use other spices if desired. Fresh Rosemary, parsley, dill, or thyme.
