So I sent my fiance to the pantry he came back with English muffins, frozen
Spinach,lemons, eggs, and unsalted butter and lots and lots of canned vegetables and meats.
Not really what I wouldve picked but the choices were slim and he grabbed what he thought I could use
I decided to try to make eggs florentine
1 tbs fresh lemon juice
1 stick unsalted butter (melted 40 secs in microwave)
4 egg yolks
Spinach
( set whites aside)
Cook spinach and drain. Set aside
In a clear heat safe mixing bowl or double pan add. Yolks and lemon juice whisk or I like to be lazy and use a mixer whisk vigorous until it doubles in size.
Then in a medium size pot or lower pot boil enough water so it does not touch the bowl or upper pot when boiling. Place bowl/upper pot over pot add butter and whisk. Until thickened take off lower pot immediately. And place in a separate bowl immediately.
Now i prefer not to waste Any thing so place egg whites in a small bowl or a microwave egg poacher. 1 min microwave. If you wish to poach whole eggs for this go for it. In the microwave place in small bowl very very important they will explode other wise pierce yolks with a knife and add 1 tbs water. Cover abd cook for a minute in microwave or until done.
On plate place English muffin spinach on top of muffin then place poached egg/white a dump the hollandaise sauce on serve ASAP.
If the hollandaise sauce over cooks I like to drain the butter abd eat it like on egg sandwich w/ spinach on the side. Enjoy.
